Strawberry lassi

The sun starts beaming and the temperatures start to rise, the Indian in me starts to crave a cooling lassi. Traditionally, a drink made with buttermilk, the bi-product of the women of the house churning white butter. It was a favourite of the men working under the hot sun when in need of refreshment. It is not so easy to find so I make it with plain yoghurt which emulates its tang but water it down when necessary for a thinner, buttermilk-like consistency. Often spiced and seasoned, this version is using the best of British produce, the summer’s ripe and juicy strawberries. 

Blend all together until frothy and serve with the ice.
